
Ingredients:
Baguette, olive oil
Tomato mix:
2 tablespoons minced shallots
2 teaspoons minced garlic
2 tablespoons red wine vinegar
1/3 cup olive oil
teaspoon salt
half a teaspoon of pepper
2 pounds halved cherry tomatoes
3 tablespoons julienned fresh basil leaves
Feta spread:
6oz feta, 2oz cream cheese
1/3c olive oil
2T lemon juice
1/2 t salt
1/4 t pepper
Directions:
Stir together shallots, garlic and red wine vinegar and let sit 3 minutes to meld
Add olive oil, salt, pepper and halved cherry tomatoes and let sit 10 minutes to meld, then add julienned fresh basil leaves
Cut baguette into half inch slices, brush with olive oil and toast at 425 for 6-8 minutes
Whir together feta spread ingredients in food processor, smear on bread and then top with tomato mix
