Ingredients:

Baguette, olive oil

Tomato mix:

minced shallots (2T)

minced garlic (2t)

red wine vinegar (2T)

olive oil (1/3c)

salt (t)

pepper (1/2t)

2 pounds halved cherry tomatoes

3 tablespoons julienned fresh basil leaves

Feta spread:

6oz feta, 2oz cream cheese

1/3c olive oil

2T lemon juice

1/2 t salt

1/4 t pepper

Directions:

  1. Stir together shallots, garlic and red wine vinegar and let sit 3 minutes to meld

  2. Add olive oil, salt, pepper and halved cherry tomatoes and let sit 10 minutes to meld, then add julienned fresh basil leaves

  3. Cut baguette into half inch slices, brush with olive oil and toast at 425 for 6-8 minutes

  4. Whir together feta spread ingredients in food processor, smear on bread and then top with tomato mix

Thick tomato slice

Basil shreds or essential oil spray

pepper

  1. Toast bagel halves some

  2. Put cheese on and melt some

  3. Put on tomato slice and salt and pepper and heat some

  4. Add basil shreds or spray
