Tomato, mushroom, onion, olive tagine topped with croutons

Ingredients:

2 cups tomatoes diced or maybe bigger chunks

2 cups chopped mushrooms

1 diced onion

1/2 cups olives

1/2 in by 1inch thick toasted bread/bagel, cubed

Directions:

  1. Saute

    Saute onions in oil, add mushrooms and tomatoes and olives, add water or broth and salt and pepper

  2. Cover and cook down

    Cook until thicker

  3. Serve

    Top with crouton cubes
